This might be one of my favorite recipes. Partially because its just good….but partially because it’s even better the next day.
Ingredients:
- 2 medium-large eggplants
- clean marinara sauce
- olive oil
- dried basil and oregano
- fresh mozzarella
- Cut the eggplant into 1/4-1/2 inch pieces
- Lay out on paper towel and sprinkle both sides generously with salt. Let sit for 30 minutes to absorb some of the moisture
- Spray cookie sheet with olive oil
- Wipe salt and moisture from eggplant with paper towel and place on cookie sheet
- Brush light coat of olive oil on eggplant and sprinkle basil and oregano on top
- Cook at 345 for 25 minutes
- Take out of oven, top with sauce and fresh mozzarella
- Broil until cheese is bubbling and staring to brown
- Enjoy!
