Eggplant Pizza


This might be one of my favorite recipes.  Partially because its just good….but partially because it’s even better the next day.


  • 2 medium-large eggplants
  • clean marinara sauce
  • olive oil
  • dried basil and oregano
  • fresh mozzarella
  1. Cut the eggplant into 1/4-1/2 inch pieces
  2. Lay out on paper towel and sprinkle both sides generously with salt.  Let sit for 30 minutes to absorb some of the moisture
  3. Spray cookie sheet with olive oil
  4. Wipe salt and moisture from eggplant with paper towel and place on cookie sheet
  5. Brush light coat of olive oil on eggplant and sprinkle basil and oregano on top
  6. Cook at 345 for 25 minutes
  7. Take out of oven, top with sauce and fresh mozzarella
  8. Broil until cheese is bubbling and staring to brown
  9. Enjoy!
